Meatballs with Mozzarella
This is a superb recipe for a family favourite, that will appeal to all ages. It is a very simple and quick recipe to prepare. If you are making your own meatballs, you can use beef or pork, or a mixture of the two!

Serves 4-6
You will need:
20 meatballs – without sauce
20 Mini Mozzarella balls Toonsbridge Dairy Cafe are perfect
20 Streaky rashers
Your favourite BBQ sauce
Wooden Cocktail sticks that have been soaked in water over/night
Method:
Make a hole in the meatballs, right in the centre.
Insert a mini mozzarella ball and form the meatball back into a ball, ensuring that the cheese is completely enclosed.
Wrap each meatball in a rasher, securing with a cocktail stick.
Pop the meatballs into a preheated oven at 180C.
Cook for 20mins, then brush the tops with some BBQ, and cook for a further 15 – 20mins.
